Sandi's Red, Hot and Blue Diner celebrates one year in business today, and owner Sandi Clark is going to celebrate with her customers.
"I'm having a one-year Grand Opening this Friday and Saturday," she told Corpus Christi Business News. "It was a tough year, but I made it."
As a show of appreciation to her loyal customers, she is offering 99 cent pork and chicken sliders both days as well as samples of her poblano and tomato soups.
She'll also have a birthday cake made to look like her 1960s-themed hot-rod diner.
Newcomers are welcome, too. Anyone trying Sandi's home-cooked, scratch-made meals will soon be regulars, she says.
"We make everything in-house," she said. "We smoke our meats here, we make our own bread."
She is laying claim to the best waffles in town after hearing her customers brag on them. "That's even on my business cards," she said. "My customers told me they are the best, so I'm claiming it."
Sandi's is open for breakfast and lunch, six days a week, serving from 7 a.m. to 4 p.m. Monday through Friday and 7 a.m. to 2 p.m. on Sunday.
"You can get a hamburger at 7 a.m. or a waffle at 4 p.m.," Sandi says. "You can get whatever you want, all day long."
