Corpus Christi might soon have a new chicken restaurant to ‘peck’ from for lunch and dinner. Raising Cane’s Chicken Fingers posted a job description for a Corpus Christi general manager about 30 days ago. The listing shows up on on several online job boards, including LinkedIn and Monster. No date is listed for the opening, or precise address, although the ads indicate the eatery could be somewhere along South Padre Island Drive.
As far as an official announcement, restaurant officials are keeping their chicken lips tightly sealed, calling news of a local site “speculation.”
Raising Cane’s is a fried-chicken chain that specializes in boneless fried chicken strips and a variety of special sauces. The very first Raising Cane’s opened on the Louisiana State University campus in 1996.
Founder Todd Graves started with the goal of serving the best chicken tenders anywhere. After his idea was turned down by investment bankers, he went to work, first at a refinery then as a commercial fisherman to raise the money for his first restaurant.
He purchased and renovated an old building at the entrance to the LSU campus in Baton Rouge, and the restaurant was an instant success. The company now has more than 360 locations in the United States, including 10 in San Antonio, the closest ones to Corpus Christi.
If you’re wondering where the name came from, Raising Cane was the founder’s friendly, yellow lab. Raising Cane II is on the job now, visiting restaurants and attending community activities. Maybe he’ll be spotted in Corpus Christi sometime soon!
