By the end of 2018, Schlitterbahn Riverpark and Resort at Corpus Christi just might turn out to be your favorite place for a family meal. Under new ownership since May, Schlitterbahn announced plans to turn its Veranda eatery into a culinary destination featuring locally sourced food reflecting the area’s cultural cuisines.
“We want our guests to fall in love with the menu offerings at the Veranda,” said Stephanie Pickett, general manager. “The newly imagined Veranda menu has harnessed our team’s experienced touch and will offer cutting-edge dishes in an incredible dining experience.”
Wolfgang Ebenbichler created the new menu and vision for the Veranda. Born in Austria, Ebenbichler is known worldwide for his innovative hospitality concepts. New dishes and handcrafted cocktails will highlight local flavors alongside classic menu offerings.
“We are firmly committed to supporting the local fishing and farming community,” Ebenbichler said. “I personally believe that the diversity of the Corpus Christi area should be reflected in both our menus and presentation. Our menu will celebrate Corpus Christi’s history and embrace its amazing future.”
Ebenbichler completed his culinary certification and hospitality management studies in Austria and began his culinary journey in the United States with a long career at the Ritz-Carlton hotels. He previously worked at Caesar’s Entertainment, the Grand Opryland Resort, Starwood Resorts, Waldorf Astoria Collection, and the Walt Disney World Swan and Dolphin Resort.
Schlitterbahn declared Chapter 11 bankruptcy earlier this year after failing to repay a $16 million loan to IBC bank. The lender purchased the property for $20 million at an auction on the Nueces County Courthouse steps. One of five Schlitterbahn water parks, the Corpus Christi venue is still operated by its founding company though owned and managed by Diamond Beach Holdings LLC, an affiliate of the International Bank of Commerce.
